Cashew Chicken

How to create better-than-takeout cashew chicken at home. This quick and easy cashew chicken recipe features chicken, crunchy cashews, and a velvety homemade stir fry sauce.  

I am a big supporter of creating Asian dishes at home that are better than takeout. My kids adore my Chinese Orange Chicken Recipe, and it often receives five-star evaluations.  

I adore preparing Cashew Chicken because the sauce is wonderfully balanced sweet and salty, somewhat sticky, and coating the chicken. To balance everything out, add the crisp, salty cashews and fresh green onions.  

Chicken Breast – For this recipe, you can use chicken breast or chicken thighs. Soy sauce serves as both a marinade for the chicken and a base for the sauce. Cornstarch thickens the sauce and coats the chicken.  

Hoisin Sauce is a deliciously sweet and spicy sauce that adds depth and flavor to this cashew chicken recipe.  

Chili Garlic Sauce is one of my favorite sauces to use in Asian dishes. Due to current shortages, it has becoming increasingly difficult to obtain. If you can't find it at the grocery store, I'll show you how to make a substitute at home.  

Chicken Stock – adds the proper saltiness to the sauce. Sugar (or Honey) – This cashew chicken sauce can be made with either sugar or honey. If you prefer less sweetness, reduce the sugar slightly. The hoisin sauce already contains sugar, so you may not need as much.  

You can use diced fresh ginger or ginger powder. Oil – this is what was used to sauté the chicken before adding the sauce. Green onions – provide a burst of freshness to the dish when ready to serve. Cashews provide the proper amount of crunch and saltiness.
