CHICKEN SOUP

The greatest chicken soup doesn't require much—just soft poached chicken, hearty winter veggies, and fresh herbs cooked in chicken stock. It's a simple mix that feels like a warm hug for your taste buds while also providing the best kind of immune boost.  

I've been preparing this exact chicken soup for more than a decade. It's my go-to meal when the weather turns cold and I want something light, brothy, healthy, and warming.   

And, while pasta noodles are commonly included in chicken soup recipes, they are not necessary. I substitute parsnips, which are just as full but have a deliciously sweet flavor that complements the fresh herbs well.  

What's the secret to producing delicious chicken soup? My response is to keep the ingredient list short and straightforward.   

This chicken soup is loaded with nutrient-dense veggies like carrots, parsnips, leek, celery, and onion, along with fresh herbs.   

Vegetables are an important component of several of my soup recipes, including lentil soup, classic vegetable soup, and cabbage soup.  

However, it is the fresh thyme and tarragon that make this chicken soup so wonderful and unique.  

If you've tried my chicken salad recipe, you know how great tarragon goes with chicken, and I'd say it's the one ingredient that really adds to the "wow factor" in this soup.
