Crunchy fennel salad with apple and celery

Delicious and simple fennel salad with apples, celery, and roasted almonds on top. Also great for lunch because it keeps well.   

The majority (if not all) of the ingredients are readily available at your local grocery shop. The salad can also be used as a side dish.  

Fennel and apple seem to be a natural pairing. The same applies for celery, which I've included here as well. Delicious and crisp apple fennel salad recipe!  

You don't need many ingredients for this delicious salad. You'll need sweet apples, a fennel bulb, and a couple celery sticks.  

I made the fennel apple salad for just one person, so I used three celery sticks. You can use more or less if you choose.  

You can change things up and use the entire fennel bulb and half of the celery. It also depends on the size of the fennel. That can vary greatly!  

To make this crisp salad, take a large bowl and thinly slice the fennel. It's even easier if you own a mandolin. I don't have one, so I sliced it with a sharp knife.   

This works well. The fennel fronds can be saved for decoration if desired. For the apples, I picked my favorite, pink lady, but you can use any apple species you choose.
