MEDITERRANEAN LENTIL SOUP

Lentil soup is a traditional vegetarian soup recipe. It's hearty, healthful, satisfyingly filling (with plant-based protein), and comforting on cold winter days. While lentil soup comes in a variety of flavors, a simple, tasty Mediterranean version is a must-try.  

When it comes to this lentil soup recipe, remember that simple does not mean dull. Oh, no! This dish is anything but that! It's full of rich taste, filling enough to serve as dinner, and simple to make with a few pantry ingredients and fresh vegetables.   

When I previously demonstrated how to cook lentils (so they don't go mushy), I also discussed why lentils are such an important element in vegan and vegetarian dishes.   

They are rich in fiber, carbs, and, most significantly, protein. That means this lentil soup is more than simply an appetizer; it's also a filling supper. It's also reasonably priced!  

Lentils: Green or brown lentils are excellent for this soup since they maintain their shape better than red lentils.  

Mirepoix Vegetables: Chopped celery, carrots, onions, and garlic are the classics that add a comfortable flavor.  

Roasted Tomatoes: While standard diced tomatoes would suffice, a can of fire-roasted tomatoes enhances the soup and adds a note of smokiness.  

Tomato Paste: Although this is a simple ingredient, it adds a lot of body to the soup. So do not leave it off.
